Fried Rice

This was delicious and worked for us as a complete meal because I added 4 scrambled eggs right at the end. You could also used scrambled tofu, or even just cubed and marinated tofu. A great way to use up leftover rice, this is originally from Vegetarian Mother's Cookbook.

Ingredients:
1 T sesame oil
1 onion, diced
1 carrot, diced
1 c. chopped broccoli
1 c. frozen green beans
3 c. cooked brown rice, cold
1/4 c. water
1 T soy sauce

Directions:
Saute onion in oil for 2 minutes, then add carrot and broccoli. Cover and steam 5 minutes. Add rice, water, soy sauce, and green beans. Stir to coat rice and veggies with sauce. Cover and steam 5 - 10 minutes, or until veggies are softened. Chop up scrambled eggs, add add to rice (sub tofu is desired). Stir to mix thoroughly, and serve hot.

Looks fantastic! Where did you find the sesame oil - Commissary or Winn Dixie? Also, did you do this in a regular fry pan or a wok?

I found the sesame oil at the commissary. I think even the WF one has it. I used a wok, but a fry pan would work fine, too.
